Quick 5 Minute Granola

I hate having to wait for granola in the oven. For some reason it just takes forever! Low temp, stir ever 10 min. and then mine always burns! This, although I want to say it is fool proof (I burnt my first batch) is so easy and so yummy.

Ingredients 1 serving

2 Tablespoons Gluten Free Rolled Oats

1 Tablespoon Raw Buckwheat

1 Tablespoon Raw Pumpkin Seeds

2 Tablespoons Dried Fruit (I used Currants and Coconut)

2 Teaspoons Water

1 Teaspoon Olive oil

1/2 Tablespoon Maple Syrup, Honey or Agave Nectar


Step 1: Mix all dry ingredients together in a microwave safe bowl

Step 2: Mix all wet ingredients into one bowl (I dump them all into my syrup bowl) and mix until all combined.

Step 3: Pour wet ingredients over dry ingredients

Step 4: Mix until everything is coated

Step 5: Place into the microwave for 1.5 minutes on half power

Step 6: remove and stir

Step 7: Place back into the Microwave for another 1.5 minutes on half power

Step 8: Remove and let cool about 2-3 Minutes

Step 9: Eat with Dairy Free milk of choice or in my case as a topping!
