I have been craving carbs lately. I decided to make so Rice pudding and OMG it was so good and warm and creamy and not too sweet. Just perfect! If you notice I only make enough for just one serving, that is because I am the only one that eats like this in my house. But this one I am going to post the full 4 servings for it!
Ingredients 4 servings
2 cups water
1 cup rice of your choice, I use white short grain
1 1⁄4 cups dairy free milk
1⁄3 cup dried fruit, I used currants
1⁄3 cup maple syrup, agave or honey
1 teaspoon pure vanilla
1⁄2 teaspoon cinnamon
1⁄4 teaspoon ground ginger
1⁄8 teaspoon ground nutmeg (optional)
Step 1: In a medium saucepan, place the water and rice
Step 2: Bring to a boil.
Step 3: cover, reduce the heat to low, and simmer for 20 minutes or until all of the water is gone.
Step 4: Add the remaining ingredients, stir well to combine, and continue to cook over low heat until all of the liquid is gone or it has a thick consistency.
Step 5: Let set for 10 minutes and then serve warm or place in a bowl and chill in the fridge.
Step 6: TOPPINGS! top with what ever you would like. I used sautéed strawberries in stevia and buckwheat.
