Coconut Chia Pudding

Chia pudding is one of those things that can be eaten at anytime of the day. Chocolate Chia pudding is good however I was out of cocoa powder but wanted something sweet, so coconut it was. If your are looking for a sweet coconut treat this is IT!

Ingredients 1 serving

1 cup Coconut milk

1/4 cup coconut shavings

3-4 Tablespoons Chia seeds

2 Tablespoons agave, maple syrup or honey

Optional: Beet Powder, Blue spirulina, Turmeric Powder


Step 1: place milk, sweetener and coconut in the blender and blend until smooth, this took me 5 minutes.

Step 2: In 6 individual bowls I placed 1/2 tablespoon of Chia seeds to each bowl,

Step 3: I then added 3 tablespoons of coconut mixture into each bowl. Mix well

Step 4: add powders to the mixture and mix it to be the color that you want.


Step 5: let the mixture sit to 15 minutes until they are thick enough to layer.

Step 6: Layer the mixtures

Step 7: place in the fridge over night for over night chia for breakfast, first thing in the morning for a sweet snack at night, or enjoy it right away

Step 8: Toppings! I topped this with hemp seeds, dried currants and buckwheat.
