Don’t let the name fool ya, the only BEET in here is beet powder. But seriously I was over seeing all the pancakes being posted on Instagram by all the vegans I follow, that i finally broke down. My first thought was “how do you make a gluten free vegan pancake taste good?” Then I had a flash back to a blog I read where it said “you are crazy if you go gluten free and vegan.” Well I am CRAZY, that is nothing new, and i made these crazy awesome pancakes this morning. They did not last long at all and you may have found me licking the plate clean! Give them a try!
Ingredients 1 serving
1/2 cup rolled oats
1 Tablespoon raw hulled hemp seed
1 Tablespoon raw buckwheat
1/2 teaspoon baking powder
1/2 cup water or non dairy milk
1/2 Teaspoon vanilla
1 tablespoon honey, agave, or maple syrup
1 tablespoon olive oil, coconut oil or vegan butter (butter and coconut oil should be melted)
1 teaspoon beet powder
Step 1: Place oats, buckwheat and hemp seeds in a blender (I used the nutrabullet) and blend into a fine powder.
Step 2: While the dry in turning into a flour add all the wet ingredients into a large bowl and mix.
Step 3: Add beet powder to liquid bowl and mix until smooth.
Step 4: once all dry ingredients are finely powdered add it to the wet ingredients and mix until there are no clumps.
Step 5: Set mixture aside and heat a non stick pan on low/medium heat (on my oven it was a 3).
Step 6: Once pan is warm enough add about 1/4 cup of batter on the pan. Once it bubbles and gets craters in it flip it and cook the other other side. Repeat this steap for the rest of the batter.
Step 7: Serve at once with you choice of syrup; honey, agave, maple or my ‘nut free’ Nutella.
