Autumn Soup

Have you ever had the Autumn Soup from Panera in the fall? Before I made the change to Veganism I loved their Autumn soup. Now It is perfect for vegetarians because it contains milk but it is not on the Gluten Free menu or the Vegan menu (yes they have both). I cant stress how AMAZING it is! When I had food poisoning last weekend and my stomach was all iffy I was craving the flavors in this soup. All the fall fruits and veggies; butternut squash, apple, carrots. Along with the fall spices too…..hmmmm so good even though it is spring here. This recipe is very easy and I will even have the Crock Pot version on here as well because let’s face it who does not love the smell of yummy food through out the day when you come home from work!

Ingredients:

1 tablespoon extra virgin olive oil

1 small yellow onion, diced

6 cups chopped butternut squash

1 cup carrots, chopped

4 cups low sodium vegetable broth

1 granny smith apple, chopped

1/2 teaspoon curry powder

1/4 teaspoon cinnamon

dash of nutmeg

1/2 cup pumpkin puree

2 tablespoons vegan butter

2 tablespoon Maple syrup, honey, or Agave

Toppings: Raw Pumpkin seeds and Coconut cream

Directions: Stove Top

Step 1: Heat oil over medium-high heat in a large pot, once hot enough add onions and sauté until translucent.

Step 2: Add squash, carrots, vegetable broth, apple and spices.

Step 3: Bring to a boil, reduce heat and cover for about 15-20 minutes. Until squash and carrots and apples are soft. Remove from heat and add pumpkin puree, butter, and sweetener.

Step 4: Blend with a hand blender until all chunks are gone or in a regular blender (in batches).

Step 5: Taste and alter spices if needed.

Step 6: Serve while warm with coconut cream and pumpkin seeds!

Directions: Crock-Pot

Step 1: Place onion, oil, squash, carrots, vegetable broth, apple and spices in the crock pot

Step 2: Cook on Low for 8 hours or High for 4 hours.

Step 3: Remove from heat and add pumpkin puree, butter, and sweetener.

Step 4: Blend with a hand blender until all chunks are gone or in a regular blender (in batches).

Step 5: Taste and alter spices if needed.

Step 6: Serve while warm with coconut cream and pumpkin seeds!
