Carrot cake….. carrot, coconut and walnuts. Oh you evil walnuts! How can I enjoy coconut cake now? I don’t eat wheat so no cake and I cant have nuts so what am I going to do???? I ran across a book yesterday while on a date with my husband, that had some yummy smoothies. However a lot of them I could not alter so I could eat. Then I saw this title Carrot Cake Smoothie! Omg yes! So here is my version!
1 baked apple (cooled) or 1 banana
2 tablespoons shredded unsweetened coconut
1 large carrot
1 tablespoon hemp seed
1/2 cup dairy free milk
1 teaspoon cinnamon
1 Tablespoon maple syrup, agave or honey
Dash of nutmeg (optional)
Step 1: Add all ingredients in the blender and blend until smooth.
Step 2: Pour in a bowl and top with hemp seeds, coconut and my quick 5 minute granola.
