The weather here is getting warmer and well warm weather calls for ice cream and popsicles! These pops were so sweet and so yummy and did I mention swee? Perfect for this warm Virginia weather.
Ingredients: 6 small pops or 3 large pops
1 5.3 oz container of coconut vanilla yogut
2 tablespoons cocoa powder
1/4 cup unsweeted shredded coconut
2 cups whole strawberries, hulled
1 tablespoon honey, agave or maple syrup
Step 1: In a blender add strawberries, sweetener and coconut. Blend until smooth
Step 2: While strawberry mixture is blending make the fudge. In a small bowl add yogurt and cocoa powder and mix until smooth.
Step 3: Once both are mixed well you have 2 options. First is to layer chocolate mix and strawberry mix. I did this by putting both mixes in seperate ziplock bags and cutting the ends off and layering it in 6 small pop trays. Option 2: mix both mixtures together and pour into each mold.
Step 4: freeze in the freezer for 6 hours.
Step 5: Remove each pop from mold by running hot water over mold to loosen. Eat right away or put in a freeze bag and store.
