I have been playing around with this recipe for a week trying to find the best combination. Today I found it and it is so good. I was sad when it ended, but there will be more in my future. If you are looking for an easy gluten free vegan pancake, here it is.
Ingredients: makes 12 minis, 6 small or 3 large
1/4 cup gluten free rolled oats blended to flour or gluten free flour of your choice
2 Tablespoons ground flaxseed seed
1 teaspoon baking powder
1/2 cup vanilla dairy free milk
1 Tablespoon maple syrup, agave or honey
Optional: beet powder, blue spirulina and tumeric
Step 1: In a medium bowl mix flour, flaxseed, and baking powder.
Step 2: in a separate bowl add milk and sweetener together and mix well.
Step 3: add liquid ingredients to dry ingredients and mix well. It may look soupy but let it sit for 15 mins.
Step 5: while the mix is thickening place a pan on the stove at a medium low heat. If you decide to color you pancakes get out 6 small bowls or your powder out and move to step 6, if not coloring skip step 6.
Step 6: for coloring pancakes only: if you are doing 1 color add it straight to the batter, about as much as you need to get desired color and mix well. If you are doing multiple different colors, divide batter evenly and then add color, mix well.
Step 7: pour batter into hot pan in the size of pancakes that you need. Wait until there are holes in the center and then flip.
Step 8: repeat step 7 until all pancakes are made then top with favorite toppings.
