Coconut Rice

Next to sticky rice this is by far one of my favorite rice combinations. Rice and coconut, who whould have known? I have had this in rice paper with fruit or a side dish it is so yummy.

Ingredients: serves 6

1.5 cups short grain rice

2 cups coconut water

1/4 cup coconut flakes



Step 1: in a medium sauce pan add rice, coconut water and coconut flakes.

Step 2: heat uncovered on stove on medium heat until it starts boiling.

Step 3: turn heat down, stir, cover with top and cook for 20 minutes.

Step 4: turn of heat, keep covered and let sit for another 10 minutes.

Step 5: serve as side dish or in wraps or as a dessert. The option is yours.
